This is a wonderful, light salad that doesn’t wilt, yet instead stays crunchy and refreshing for your guests. Great to add some cultured veggies to it too!

1 Large Cucumber
1 Lemon Cucumber
1 T. Apple Cider Vinegar
3/4 T. Ume Plum Vinegar
1 Squeezed Lemon and or Lime
1/4 Cup Chopped Cilantro
1-2 T. Red Onion, minced
1 Drop Lime Essential Oil
Dash of Dried Dill, approx 1/4 teas.
Salt and Pepper to taste
Garnish with Avocado

Directions:

Chop Cucumbers and mix together with the rest of the ingredients. Wonderful salad to have at a BBQ.

Pairs well with warm entrees that need a little cooling down.
Cilantro is very effective at cleansing out metals, and cucumber cleanses the liver of toxins.
