If you’re tired of eating plain ‘ol sauteed greens and garlic, this is a wonderful dish to eat alone or for brunch with your favorite eggs. The shredded Zucchini gives it a delicious “cheesy” texture. It’s super easy, and will turn kale into a favorite comfort food.

4-5 Organic Zucchini, shredded
5-6 Cups raw Kale (1 large bag at the grocery will work)
2-3 Tabl. Pesto Sauce (Trader Joes or Costco have a great one)
Salt and pepper to taste
Chopped Brazil Nuts, Optional
Goat Cheese, Optional to sprinkle on top

Saute the shredded zucchini in a large pan until most of the water has evaporated. Add the kale and cover for 2 mins. Then, mix in the pesto. Serve warm with sprinkled nuts and/or goat cheese. Yum!</p>
