This is a wonderful meal by itself or as a delicious side dish. It is deeply nourishing both emotionally and physically. and it’s a great alternative to potatoes.
Millet is also one of the few grains that is not acid producing, but rather alkaline forming which makes it a great comfort grain that is easy on your digestion. I suggest to my clients that they eat their grains at dinner time, as it helps your body produce serotonin, which supports a good nights sleep.
1 C. Dry Millet
1/4 to 1/2 C Pesto Sauce
Kombu (2 to 3 inch piece)
1 tsp. Sea Salt
Garnish with chopped Brazil Nuts, Parmesan Cheese, or Goat Cheese
- Let millet soak for at least 8 hours in 2 cups water.
- After soaking rinse well, and add 3 cups fresh water.
- Add Kombu piece and salt to your water, bring to a boil and then simmer for 30 minutes or until water is absorbed. Millet should be very expanded and easy to fluff up with a fork.
- Mix in the pesto sauce, garnish and enjoy!
