Super Chocolate Berry Fudge
This is a wonderful versatile power-treat that can be used strictly as a delectable Fudge Square, or it can be melted over your favorite raw cookie, cake, or ice cream. It’s low-glycemic and packed with powerful nutrition. A little bit goes a long way.
Not only is chocolate rich in Flavinoids and Antioxidents, but it actually opens our capillaries and allows our system to more readily absorb those important healing nutrients. For this reason, I have included some of my favorite super foods that pair beautifully with the succulent flavor of chocolate. Feel free to omit whatever you don’t have. Or, add your own favorites.
½ C. Hemp Seed, Optional
1 T. Raw Cashew Butter or Raw Almond Butter
¼ C. Cocoa Butter, melted in double boiler
½ C. Coconut Oil, melted
1 C. Raw Cocoa Powder
½ tsp Salt
½ tsp Vanilla Powder
2 T. Lakanto Maple Syrup
½ to 1 ¼ tsp Stevia Powder, to your taste.
2 tsp Raw Unfiltered Honey
¼ tsp Cinnamon
Dried Blueberries and/or Cranberries
Chopped Brazil Nuts
In a food processor, mix the first 4 ingredients until it is a thick paste. Add the rest of the ingredients, including any super foods you like (see below), and blend until creamy. Add the stevia sparingly until you get your desired sweetness. Stevias sweetness varies to much, so be careful.
Below are some of my favorites super foods. Add 3-4 Teas to the blended mix.
1 tsp Goji Berry Powder
1 tsp Maqui Powder
1 tsp. Mesquite Powder
¼ tsp Blue Green Algae
Pour mixture into an 8 x 8 Pyrex dish, sprinkle with dried berries and chopped brazil nuts. Refrigerate until firm. Slice and serve, or pour warm mixture into a jar and spoon it out whenever you want a little super-charged chocolate boost.
