Holiday Jicama Salad
This salad is super easy and delicious. Mixes wonderfully with your Holiday Dinner, as it makes a great alternative to heavy stuffing’s that are packed with gluten and fat. The parsley cleanses the blood and the pomegranate fills you with tart antioxidants!
2 Cups Spirilized Jicama (see pics below)
1 bunch fresh Parsley, Chopped
¾ Cup chopped Basil
½ Cup chopped Mint
1 Cup Pomegranate Seeds
1 Squeezed Lime and Zest
2-3 tsp Ume Plum Vinegar, to taste
Red pepper flakes, to taste
1 tsp Apple Cider Vinegar
2 tsp Raw Honey
2 T. Avocado Oil
Himalayan Salt to taste
½ Cup Hemp Seed, optional
Toasted Walnuts, Optional
- Mix jicama and spices together. Set aside
- Mix up the rest of ingredients, except for seeds in a large bowl.
- Add jicama mix.
- Gently mix in pomegranate seeds and serve.
- Top with toasted walnuts and or lemony cashew cream.
